400 gm Self Raising Flour
200 gm Butter/Marg
150 gm Caster Sugar
150 gm Currants Or Raisins
Half A Teaspoon Of Mixed Spice
2 Eggs
Pinch Of Salt
Milk To Mix

In A Bowl sift dry ingredients together, Mix the room temperature butter and mix till you get crumble type consistency, add dry fruit then the beaten eggs and a little milk to make a soft dough.
Roll onto a slightly floured surface to 5 mm thick, cut into 6 cm rounds.
Gently heat a large frying pan or griddle lightly greased, Place rounds 3-4 at a time and medium heat for about 3-4 min’s each side until golden brown. Cool and sprinkle with caster sugar.
Serve alone or with butter, Store in a air tight container.
