Vegetarian Bolognese


Vegetarian Bolognese

Prep Time: 15 Minutes
350 gm Veggie Mince (Quorn)
100 gm Onions (Diced)
100 gm Mixed Peppers (Diced)
100 gm Carrot (finely Diced)
1 Clove Garlic (Crushed)
300 gm Chopped Tomatoes
2 Tbsp Tomato Puree
1 Cube Vegetable Stock
500 ml Water (Hot)
Sprinkle Mixed Herbs
Salt & Pepper
Spaghetti As Needed/Pasta
50 gm Grated Parmesan
1. Heat a dash of oil in a saucepan, and sweat the onions, carrots and mixed peppers for 3 minutes.
2. Add garlic puree, veggie mince, mixed herbs, tomato puree and cook for a further 5 minutes.
3. Make up the vegetable stock, whisk the hot water and stock together then add to the saucepan and bring to the boil.
4. Add chopped tomatoes and tomato puree, reduce heat and simmer for 20 minutes.
5. Taste & Season with Salt and Pepper, serve with either spaghetti or pasta, sprinkle with grated parmesan and serve.
