Tomato & Basil Soup

Homemade soup is something that can be created from the simplest of ingredients, the key to a good soup is to reduce the soup, bring to the boil and let it simmer for minimum of 30 minutes.

Portion size 4-6

Ingredients:

2 Slices Bacon (Diced)
150 gm Chopped tomatoes
100 gm Carrots (Diced)
100 gm Onions (Diced)
100 gm Peeled Potatoes (Diced)
50 gm Celery
1.4 Litres Water (Hot)
100 gm Tomato Puree
20 gm Vegetable Stock
20 gm Margarine
50 ml White Wine Vinegar
2 Tbspn Demerara Sugar
1 Tspn Basil (Dried) or 1 small bunch Basil Finely chopped

Method:

1. Wash, Clean and roughly chop vegetables.
2. Heat margarine in a saucepan, Sweat the onions & Bacon for 2 mins add all the vegetables and sweat for  mins.
3. Add together the vinegar and sugar then add chopped tomatoes.
4. Put in the tomato puree, make up the vegetable stock, whisk the water and stock together.
5. Then pour in stock and bring to the boil, reduce heat and  simmer for 40 minutes add basil half way through.
6. Blend soup using a hand stick blender, taste and season with salt & Pepper, Serve.
