Spicy Nacho Chicken

  • 4 Pieces Chicken (breast)
  • 100 gm Plain Flour
  • 3 Eggs
  • 150 gm Breadcrumbs
  • 5 gm Mixed herbs
  • Salt
  • Pepper
  • Paprika


Combine the mixed herbs and breadcrumbs.
Season the chicken pieces and pass them through flour, egg wash and breadcrumbs.
Deep fry the chicken pieces for 2 mins all your trying to do is seal the chicken and until crisp and golden brown, 1 at time if needed finish cooking them in a hot oven 160-170c for 20-30 mins .

Ingredients: Tomato And Basil Sauce

  • 100 gm Onions(diced)
  • 500 gm Chopped Tomatoes
  • 30 gm Tomato Puree
  • 1 Clove Garlic Chopped and puree
  • 1 tbsp White wine Vinegar
  • 4 gm Dried Basil
  • 6 gm vegetable stock
  • Salt and Pepper to taste
  • Jalapenos


Add 1 tbsp of oil, add diced onion to pan adding garlic sweat for about 3 mins ,add tom puree chopped tomatoes and basil and cook for a further 5 mins, make up vegetable stock and add to the saucepan add vinegar to the mix and simmer for 30-45 mins add salt and pepper to taste, lastly add chopped jalapenos and simmer for 5 mins.

Remaining Ingredients:

  • Doritos(Any Flavour)
  • Grated Cheese (Mozzarella or Grated Cheddar)


Once your southern fried chicken is cooked, add a spoonful of spicy tomato sauce, gently with clean hands crush nachos/doritos sprinkle over the tom sauce, add grated cheese over the top place under a grill until golden brown and serve.
