Sausage & Tomato Soup

Homemade soup is something that can be created from the simplest of ingredients, the key to a good soup is to reduce the soup, bring to the boil and let it simmer for minimum of 30 minutes.


Portion Size:4-6


50 gm Chopped Cooked Sausage/Or Salami Sausage
20 gm Butter
100 gm Potatoes (Diced)
100 gm Carrots (Diced)
1 Medium Onion (Diced)
1 Teaspoon Paprika
225 gm Chopped Toms (Tinned Or Fresh)
30 gm Chicken Stock
450 ml Water
Quarter of a Teaspoon of Rosemary
Salt And Pepper To Taste
400 gm Cannellini Beans
100 gm Tomato Puree


1. Melt butter in a saucepan add onion, carrots and potatoes and sweat for 5 mins,
2. Add paprika and chicken stock and mix well, add tom puree chopped tomatoes combine stir and add water bring to the boil,
3. Stir in rosemary and add sausage and beans simmer on low heat for about 20-30 mins.
4. Taste and then season with salt and pepper Taste and improve with more if needed.
5. Serve.

Chefs Tip:

You can spice this soup up with chilli powder if you choose and use which ever sausage you prefer or can afford, the better the sausage the better the soup. Enjoy
