Poached Eggs Benedict

Eggs Benedict is a traditional American brunch or breakfast dish that consists of two halves of an English muffin each of which is topped with Canadian bacon – or sometimes bacon – a poached egg, and hollandaise sauce.

Portion Size: 4


4 Eggs poached
4 Slices Buttered toast
OR 4 English Muffins/Crumpets
4 Slices Cooked Smoked Ham/ Smoked Bacon
250 ml  Homemade –   Hollandaise sauce
Salt & Pepper


1. Cut an 8 cm round from each piece of toast.
2. Cover each with a slice of Ham/Bacon and heat through.
3. Reheat the poached eggs in hot salted water.
4. Drain in a cloth place, on the tongue and coat with the hollandaise sauce.


A half muffin or crumpet may be used instead of toast and ham may be substituted for Bacon
Chef Tip:
1. Always Wash your hand’s before any food preparation begins.
