Spicy Parsnip Soup

Ingredients:

  • 350 gm Parsnips (Diced)
  • 50 gm onion (Diced)
  • 150 gm Peeled Potatoes (Diced)
  • 1 Celery Stick (sliced)
  • 100 gm Carrots (Diced)
  • 1 cube Vegetable Stock
  • 1 tsp garlic Puree
  • Sprinkle Cumin Dried Powder type
  • Sprinkle Chilli Powder
  • Salt and Pepper to taste
  • 1.4 litres water

Method:
Heat 1 tbsp Margarine / Butter in a saucepan, add all vegetables and fry them off gently for 3 mins,
add spices cumin chili and garlic and fry for further 2 mins, add vegetable stock and bring to the boil turn down the heat and simmer for 30 mins.. till all veg is soft.
Remove from heat using a blender blend till soup is completely smooth in texture and all ingredients are combined and Serve.
