Minted Pea Soup

Ingredients:

250g Frozen Peas

125g Potatoes (diced)

5g margerine/butter

1 stick celery

50g leek(approx half a leek)

1 veg stock cube

125 litres water

10 ml mint sauce

Method:
Heat Margerine in Saucepan, add potatoes/celery, leek sweat for 3 mins add stock , Simmer for 15 mins add peas bring back to boil for 12-15 mins, add mint sauce season with salt and pepper to taste.
Use a hand held stick blender and serve:
