Light Fruit Cake

  • 175 gm Butter
  • 100 gm Dark Brown Sugar
  • 100 gm Caster Sugar
  • 3 eggs
  • 250 gm Self Raising Flour
  • 2 tbsp Milk
  • 300 gm Mixed Dried Fruit
  • 1 orange (Grate The Zest)
  • 2 tsp Mixed Spice

Grease your baking tin(Round cake tin best approx 20cm diameter/7.5cm deep.Add greaseproof paper if possible.
Preheat oven to 160c.
Combine both brown sugar and caster sugar together,add butter and mix until fluffy in texture try to use room temp butter,then gradually add eggs 1 at a time whilst still mixing then slowly add the flour,to the mix add dried fruit,orange zest and mixed spice.
Decant into your tin
Place in preheated oven 160c for 60 mins check then cover with tin foil(this is to stop top of the cake going to crispy) then place back in oven for another 30 mins.check with a knife insert into cake if knife comes out clean then its ready,leave to cool for 1 hour then slice as needed.

Add cherries and add or take away ingredients as you wish.
This is a basic sponge mix fruit cake is should be light and fluffy to eat hope you enjoy.
