Fudge is a type of confectionery which is made by mixing sugar, butter and milk, heating it to the soft-ball stage at 240 °F, and then beating the mixture while it cools so that it acquires a smooth, creamy consistency.
Portion Size: 30 Pieces
100 gm Caster Sugar
100 gm Golden syrup
100 gm Butter
250 ml Evaporated milk or single cream
1. Put the sugar, syrup, butter and evaporated milk into a saucepan and heat slowly until the butter has melted.
2. Continue to heat (be careful as the mixture is very hot) to soft ball stage 116°C stirring gently then remove from the heat, add the vanilla essence and beat vigorously until close to setting point.
3. Pour into lightly greased trays allow to cool then refrigerate for approx 1 hour and when nearly set, cut to the desired portion size.
