Eve’s Pudding

Ingredients:
500 gm Cooking apples, quartered, cored and diced
50 gm Sugar
Butter for greasing
Custard or cream to serve

Sponge:
75 gm Whole meal Flour
100 gm Margarine
100 gm Caster Sugar
2 Eggs Beaten
Few Drops of vanilla essence
1-2 teaspoons of milk
25 gm Self Raising Flour
1 Teaspoon of Baking Powder

Method:

Preheat oven to 160c/Gas mark 4 Butter your oven proof dish ensuring greased all over. Mix the apples with the sugar,then spread evenly around your oven proof dish. Put the wholemeal flour into a bowl,add marg, sugar,eggs and vanilla essenceand 1 teaspoon of milk,then sift in the self raising flourand baking powder. Beat together with a wood spoon for approx 2 mins until evenly blended. Beat in the remaining milk.mix well. Spread the mixture over the applesand level the surface. Bake in the oven for approx 40-50 mins,until the topping is firm to touch and apples are cooked. Serve hot with custar or Cream
