1.2 kg Chicken Breast (Diced)
1 Tin of Apricot Quarters (Diced)
400 gm Chopped Tomatoes
2 Large Onions (Finely Diced)
2 Teaspoons Demerara Sugar
50 ml Malt Vinegar
1 Teaspoon Tumeric
1 Teaspoon of Ginger
2 Crushed Garlic Cloves
175 ml Chicken Stock
Salt And Pepper To Taste

Preheat oven to 170c, Add a drizzle of oil to a pan, add onion a fry gently for about 3-4 mins add garlic fry for a further 2 mins,now you can add diced chicken cook until all chicken is completly sealed, add ginger, tumeric,vinegar,sugar and stir well add chopped tomatoes and diced apricot bring to the boil and stir in the chicken stock again bring back to the boil allow to simmer for 5 mins and remove from heat,Place your mixture (and chicken into your large oven proof dish cover with tinfoil and place in oven for approx 75 mins, remove from oven taste and adjust seasoning with salt and pepper. Serve at once
