Celeriac & Apple Soup
Ptns 4-6
Ingredients:
Half A Celeriac
15 gm Vegetable Stock
2 Sticks Celery
75 gm Cooking Apples (Or Tinned)
50 gm Margarine
100 gm Onions
50 gm Plain Flour
1.4 Litres Water (Hot)
Salt & Pepper

Method:
1. Wash and clean the vegetables,cut and dice all the same size
2. Heat the margarine in a saucepan, add vegetables and sweat for about 3 minutes
3. Make up the vegetable stock, whisk the stock and hot water together
4. Add the flour to the saucepan and mix well cook for 2 minutes, add the stock and the apples bring to the boil and simmer for 30 minutes
5. Blend the soup using a hand stick blender until smooth adjust seasoning with salt & pepper
6. Serve
