Carrot & Coriander Soup

Homemade soup is something that can be created from the simplest of ingredients, the key to a good soup is to reduce the soup, bring to the boil and let it simmer for minimum of 20 minutes .


Portion size  4-6


400 gm Carrots
125gm Onions
Fresh Coriander Chopped
20 gm Veg Stock
1.4 Litres Water
Salt & Pepper
25 gm Margarine


1. Wash, Clean and roughly chop vegetables
2. Heat Marg in a saucepan
3. Add carrots and onions and sweat for 3 minutes
4. Make up the vegetable stock, whisk the hot water and veg stock together
5. Add stock and simmer for 40 minutes until vegetables are tender (Al Dente)
6. Add Chopped Coriander and blend soup using a hand stick blender
7. Taste and season with salt & pepper as required
8. Serve.

Chef Tips:

This dish is great with some homemade croutons. or a crispy roll
