Braised Rice

Ingredients:
400 gm Long Grain Rice
100 gm Red Onions (Diced)
50 gm Mixed Peppers (Diced)
50 gm Sweetcorn
50 gm Peas
10 gm Vegetable Stock
1 Litre Water (Hot)
Sprinkle Of Oil

Method:
1. Heat a sprinkle of oil in a saucepan and sweat of the onions for about 3 minutes
2. Add Rice and stir for 1 minute
3. Make up the vegetable stock, whisk the hot water and veg stock cube together
4. Remove from heat and place your miture into an oven proof dish, Pour over the stock and cover with s sheet of greaseproof paper
5. Bake at 160c for 20 mins, once cooked mix well
6. Serve
