BARBECUE SAUCE
1 LITRE
Ingredients
100 gm Onions
50 gm Celery
50 gm Red peppers
50 gm Green peppers
250 gm Tomatoes
50 gm Mushrooms
Oil 25 ml
25 gm Cornflour
Garlic 2
cloves
25 gm Paprika
50 gm Sugar
Drizzle Of Worcester sauce
Chilli sauce
300 ml Beef  stock
Salt
Pepper
Method:
1. Peel and finely chop the onions. Blanch and finely dice the tomatoes. Remove the seeds and cores from the red and green pepper. Slice the mushrooms. Peel and finely dice the celery and crush the garlic.
2. Heat a little oil in a pan, add the onions, crushed garlic, celery and peppers and saute until tender.
3. Add the tomatoes, mushrooms, stock, sugar and seasonings. Bring to the boil and simmer for 30 minutes . (can also blend to a smooth sauce)
4. Thicken with the cornflour, adjust the seasoning and serve.
